The birthday cornflake tart

It was Nath's birthday on Monday and with me being the doting fiancée (ha!) I asked him if he would like a cake. I was mainly thinking of the tasty chocolatey treat and a way to distract Ava with a baking activity.

Did he ask for a cake? No. Instead he asked for a cornflake tart....I'd never heard of it. If you went to school in the UK you're probably familiar with cornflake tart but having spent my childhood in France the whole thing was completely alien to me. After a quick Google and a trip to the shops I had all of my ingredients ready. It's so simple to make and a great thing to make with the kids if you're ever stuck for a rainy day activity.

You will need:

1 sheet of ready prepared shortcrust pastry
85g cornflakes
115g golden syrup
55g butter
25g dark brown soft sugar
100g of warm jam
a pinch of salt.


1) Preheat your oven to 200 C

2) Line a round, oven proof dish with the shortcrust pastry, trim the edges and prick the base with a fork

3) Place a sheet of foil on top of the pastry and fill the base with baking weights or dried beans (I used dried lentils). Bake in the oven for 20mins or until the pastry is lightly golden. You may need to remove the foil and beans and bake for a further 5mins

4) While it's baking mix the butter, syrup, salt and sugar in a large saucepan. Once the sugar has dissolved fold in the cornflakes, making sure they're all coated in the syrup.

5) Remove the pastry case from the oven and take off the foil and dried beans.Spread the base with the jam and pour in cornflake mixture. You can level it up with a wet knife.

6) Cook for a further 5mins and serve with warm custard!
