Goats cheese and tomato tartlettes

Since returning from my hen party in Barcelona I've been craving healthy, fresh food. If you saw my vlog you will have seen that we did an awful lot of eating and since then I haven't really stopped which isn't great with my wedding just around the corner.

Anyway, tonight I fancied something a little different and as it turned out well and I didn't burn it (success), I thought I'd share the recipe with you guys. This was honestly one of the quickest & easiest recipes I've made in a long time. Perfect for busy mums.

You will need:

Jus' Roll Puff Pastry
Tomato Purée
Soft Goats Cheese
1 Tomato
Olive Oil

Method (serves 4):

Remove the puff pastry from the packaging, roll out and cut into 4 equal squares.

Spread with tomato purée and crumble the goats cheese on top.

Tear some of the spinach leaves and add to the tartlettes, add some diced tomato.

Season and drizzle with olive oil.

Pinch the corners of your tartlettes together and twist them. Fold the sides inwards once you've done this.

Brush with a beaten egg

Pop in the oven for 12-15mins on 200C

I served mine with sweet potato fries, made on the George Foreman and spinach leaves with a drizzle of Balsamic vinegar.
